Bean and Veggie Salad with Avocados

Today for dinner I put together some of my favorite foods and it came out fantastic! It was so delicious that I thought I would write a blog post about it. If you would like to make this Bean and Veggie Salad yourself, here is the recipe:

All you will need is:

Red Onion
Roma Tomatoes
Pinto Beans (I always buy Goya Low Sodium beans)
Avocado
Feta Cheese

All you do is cut up your tomatoes, avocado, and red onion. I always weigh my food because I am always counting my calories and want to make sure I don’t go over. The amount of food you see in the dish below comes in at 423 calories. It’s 100 grams of Avocado, 224 grams of Roma Tomatoes, 130 grams of Pinto Beans, 84 grams of Red Onion, and 1.5 servings of the Feta Cheese. I used reduced fat Feta Cheese in case your wondering.

Just cut everything up and mix it together. Then I topped mine with some basil, cracked peppercorn, and some garlic powder.

I hope you enjoy it as much as I do. I enjoyed it so much that I made it again for lunch today. It’s so nice when everything is already cut up and in the fridge. I use a lot of the same veggies in the foods I make each day so I always have tomatoes and onions already pre-cut in the refrigerator.
